Coconut Chocolate Protein Frozen Yogurt

Summer is finally here and what better way to cool down than with a sweet treat that isn’t full of saturated fat and processed sugar.  You can easily make this a head of time and I love the idea of pouring the mixture into Popsicle molds but I didn’t have any (boo!). I’m off to buy Popsicle molds now…stay tune for my next protein frozen treat.  Bring on Summer! Ingredients: 2 Scoops of New Zealand Whey Protein Powder form Interactive Nutrition 1 cup Plain Greek Yogurt 1 cup Coconut Cream 2 tbsp Cocoa Powder 2 tbsp Coconut Sugar 2 tbsp Raw Organic Coconut Flakes How To Make: Blend all ingredients until a smooth consistency Pour into a baking dish or container (approximately 2 inches deep) Freeze for at least 2 hours Scoop and serve into a bowl  Top with coconut flakes

3 ingredient Macaroons! 

I love how this recipe has only THREE ingredients and one of them is coconut (my absolute fav!).  Coconut has been a superfood by many cultures around the world and the saturated fat in coconut is a fat that is rarely found in nature known as Lauric Acid. This type of fat is like a miracle ingredient because of all the health promoting properties.    Our body converts lauric acid into monolaurin, which has anti-viral, anti-bacterial, and anti-protozoa properties which help with viruses like HIV, herpes, measles and the common cold and flu. Coconut is also amazing for our hair, nails, skin, metabolism and supports the health and proper function of our thyroid.  So while these macaroons are quick and deliscious they’re also a powerful package of nutrients.  Ingredients: 3 cups of unsweetened shredded coconut  3 egg whites  2-3 tbsp Maple Syrup or sweetener of your choice  How to make: Preheat oven to 300 degrees Spray a muffin tin with coconut spray  Mix shredded coconut, egg whites and syrup together until combined  Press mixture into …

Protein Grab and Go Bites! 

I’ve always been a ‘Busy-Bee’ with owning my own business but the word ‘busy’ is on a whole new level now that I’m a #Mommy. During times of chaos…in between feeding my boy, tending to my boy, coaching clients, writing, doing laundry (2-3 loads a day with my Spitup Monster), dishes, running after 3 ferrets (yes 3!!) etc. etc. etc. it’s so easy to grab unhealthy fast food choices (and I have been guilty of this!). When I made these protein bites I was surprised with how filling they are! They’re especially great in between meals or when craving a little something sweet…and they definitely help out a VERY hungry (sometimes hangry lol!) breastfeeding Momma!
