Sweet Potato Protein Pancake!

My Breakfast! A nice change to the good ol’ protein pancake and I must say they are to die for. They are high in protein, fibre and give energy to start your day right.

Ingredients:

  • 1 medium size sweet potato
  • 5 egg whites
  • ¼ cup quinoa flour
  • 3 tbsp of almond milk
  • 1 ½ tsp vanilla
  • 1 ½ tsp cinnamon
  • 1 packet of stevia (optional)
  • ½ tsp sea salt
  • 1 tbsp coconut oil

 How to make:

  • Boil a sweet potato until soft (do this ahead of time)
  • Mush in a bowl with a fork
  • Add in all ingredients and mix until a smooth consistency
  • Heat coconut oil in a non-stick pan – dab with a paper towel for any excess oil
  • Scoop out pancake mix in the pan to your desired circle diameter
  • Cook for 2-4 minutes each side – until golden brown
  • Serve with fresh berries and a drizzle of organic maple syrup (optional)
