My Breakfast! A nice change to the good ol’ protein pancake and I must say they are to die for. They are high in protein, fibre and give energy to start your day right.
Ingredients:
- 1 medium size sweet potato
- 5 egg whites
- ¼ cup quinoa flour
- 3 tbsp of almond milk
- 1 ½ tsp vanilla
- 1 ½ tsp cinnamon
- 1 packet of stevia (optional)
- ½ tsp sea salt
- 1 tbsp coconut oil
How to make:
- Boil a sweet potato until soft (do this ahead of time)
- Mush in a bowl with a fork
- Add in all ingredients and mix until a smooth consistency
- Heat coconut oil in a non-stick pan – dab with a paper towel for any excess oil
- Scoop out pancake mix in the pan to your desired circle diameter
- Cook for 2-4 minutes each side – until golden brown
- Serve with fresh berries and a drizzle of organic maple syrup (optional)
